The Oak Knoll sub-AVA is is one of Napa Valley’s oldest grapegrowing areas dating back to 1851, is located in the southern part of Napa, and is significantly colder region due to the coastal influence from the San Francisco Bay.
Winemaking: The grapes were handpicked in the begining of October, de-stemmed and crushed into small fermentation tank and allowed to cold soak for 3 days to help stabilize the color and enhance flavor. It was fermented for 17 days and pump-over 3 times a day, with an additional 3 days extended maceration to increase extraction of color and phenolic compounds.
