Introduction: The 2021 Petar Oak Knolll Cabernet Sauvignon fruit is coming from small family vineyard located on Silverado Trail, southeast of Oak Knoll District. The Oak Knoll sub-AVA, is one of Napa Valley’s oldest grape-growing areas dating back to 1851, is located in the southern part of Napa, and is significantly colder region due to the coastal influence from the San Francisco Bay.
Winemaking: The grapes were handpicked in the begining of October, de-stemmed and crushed into small fermentation tank and allowed to cold soak for 3 days to help stabilize the color and enhance flavor. It was fermented for 18 days and pump-over 3 times a day, with an additional 3 days extended maceration to increase extraction of color and phenolic compounds. The wine is then gently pressed and aged on fine lees for 18 months in 100% French oak barrels with 40% new oak to preserve the delicate notes and mouthfeel. Only 9 barrels produced.
Tasting Notes: Bold and balanced the 2021 Petar Oak Knoll Cabernet Sauvignon, exhibiting aromas of dark fruit, cassis, earth, and cigar box accented with spice notes. This full-bodied and well-balanced wine makes a perfect accompaniment to any grilled meat dishes.
